Celebrating the Joys of the Christmas Season

Cranberry Bread Recipe

January 26, 2009 by: goober

Ingredients needed to make Cranberry Bread:

1 orange
2 tbsp butter
boiling water

2 cups flour
1/2 tsp salt
1/2 tsp baking soda
1 1/2 tsp baking powder
1 cup sugar
1 egg (beaten)

1 cup cut cranberries
1 cup chopped walnuts
1/2 cup flour

Preparation Instructions:

Squeeze the juice out of the orange and grate the peel. Add butter and enough boiling water to the orange juice to equal about 3/4 cup of liquid. Let the mixture cool.

Once cooled add all of the dry ingredients to the orange juice mixture and mix. Add the egg and mix until it is thoroughly blended.

In a separate container, mix the nuts and cranberries together and coat them with the 1/2 cup flour. Add the nuts and cranberries to the juice mixture and mix well, the batter will be stiff.

Bake the bread in greased loaf pans for one hour at 350 degrees, or until done. The bread is done when a toothpick can be inserted in the middle of the loaf and come out clean.
